Meatball with Rice & Corn

Ingredients For Meatballs  

2 to 3 lbs of ground beef extra lean.
you can also use ground pork, chicken, or any other ground meat to make these meat balls.
Spices to taste.
I use garlic and Italian seasoning and some times Parmesan cheese.
Sprinkle black pepper into meat as desired for your taste.
Sprinkle salt if you wish into these meat balls.

Directions  

Heat oven to 5oo degrees.
Line a broiler pan or cookie sheet with paper parchment.
Mix above ingredients in a big mixing bowl mix well.
With a table spoon measure one heaping spoon for each meat ball.
Place meat in hand and roll into a ball then place on cookie sheet or broiler pan that has been lined with a sheet of parchment paper.
Make sure the meat balls do not touch.
Place in 5oo degree oven for 15 mins. or till light brown.
Watch closely so they don’t burn.

These meat balls can be made ahead of time and frozen to use for all kinds of dishes. meat balls may look dry but they are not. If you freeze them you can reheat them in placing meatballs into a pot full of tomato juice for about 20-35 minutes

Rice and Corn

Make rice, take one can of corn, drain, mix with hot rice add butter and place in the over for 10 minutes. Serve meatballs over rice.
