Vegan Lentil Soup

Out of pure desperation to stick to my new diet that is very limited and boring, I came up with this great recipe that’s not only healthy, delicious but also very filling and enjoyable.    

1 ½ cup of red and green lentils  

Chop:  

8 oz of chopped butter squash
½ an onion
1 tsp of fresh ginger
½ bunch of cilantro
½ bunch of baby dill
1 large tomato
l leaf of Green Kale
3 sticks of celery
1 cup of carrots shredded  

4 cups of vegetable broth
3 cups of water
lemon juice to taste  

Wash lentils, combine all of the ingredients except baby dill and cilantro add broth and water.  Cook for about 45 minutes, add cilantro baby dill and lemon juice.  Cook for about 15 minutes.  Add paper and salt to taste.  (usually it’s not necessary)
