yes, I’m still managing to sort of get dinner on the table.  

How you ask?  I made sure to get help from the market and just using the KISS method.  Keep it Simple, Silly.

I made sure to buy things that are pre-washed:  bags of spinach, broccoli and cole slaw.  I bought things that didn’t need to be cut-just given a rinse, like cherry tomatoes, baby red potatoes and easy to eat fruits like apples, pears and bananas.

For proteins-I had my nice helper at the fish/meat counter package things in easy 2 people portions:  fish, sausage, chicken breasts and leg quarters.  

Okay-this is not what I would usually do and I’d rather use some spices, herbs and grills-but this isn’t going to happen.

I’m going with the flow.  

We may not have interesting new dishes for the next month, but I’m feeling less of a burden, making this a plus.

Hubby is happy too-I’m sure I mentioned his idea of a “meal“, so he’s relieved that he just has to take it out of the oven/microwave and dish it out. He cleans it up too.

So mealtime isn’t a gourmet experience, but we‘re not starving.
