I found this online and it’s a very accurate picture of the cacao industry today. The story goes into detail about the various variety of trees that produce cacao and the quality of each. There’s also a mention of a couple of chocolate making companies that use the highest quality beans. One of them is Valrhona. I use a lot of Valrhona in my work and can say that it truly is the highest quality chocolate I’ve ever used.

I’ll let the article speak for itself but in addition, I could say a lot about chocolate from my 8 years working with it. It’s a very interesting substance.

So here’s the article. I especially liked the accompanying photos of this cacao plantation in Venezuela.
