I love finding these recipes-something unique and easy.

One of my favorite desserts is Chocolate pudding.  As you might have guessed, it’s not easy to do when you don’t do “dairy”

I found this recipe on a vegan site and I saw it made on a show on the Cooking Channel.  The secret ingredient?  Avocadoes.  Yes-you read correctly!

Chocolate Avocado Pudding

Ingredients:

4 ripe avocadoes
3 Tbsp. unsweetened cocoa powder
1/3 C sugar (I used splenda and it was fine)
1 C unsweetened vanilla almond milk (I’m sure soy, coconut and rice would also work)
1 tsp. pure vanilla
1 tsp. sea salt
1/3 C pure maple syrup
mini chocolate chips for garnish

Directions:

Get out the food processor and scoop all the avocado into it.

Add the “milk” and syrup and begin to pulse.

Once it’s creamy, add the dry ingredients and vanilla until well blended.

Pour into small serving dishes and chill for about an hour.
