Our niece Morgan has celiac disease.  It’s not really a big deal these days.  You can get a LOT of products to chose from that have no gluten.  But while looking for a dessert to make recently-I’m getting bored with some of the usuals around here, I found this on another food blog!  It’s a “healthy” version (at least as healthy as any dessert can get) of the oh-so-delicious, but ever so fattening Tollhouse Pie.

I’m going to give it a go when I get back from vacation in mid-April.

But if someone tries it before then, please share your thoughts on the outcome.  I’ve never put a recipe here that I either haven’t created, adapted or at least tried, so here it is:

Deep Dish Cookie Pie
(gluten and dairy free)

2 cans of either white (cannellini) or garbanzo beans, rinsed and drained
1 C quick oats
1/4 C unsweetened applesauce
3 tbsp. canola oil (or vegetable, even coconut)
2 tsp. pure vanilla
1/2 tsp soda
1/2 tsp. salt
1-1/2 C brown sugar (yes, it’s a lot)
1 C 60-72% chocolate chips

In a food processor (some remarks on where I found this said it wasn’t easy to pull off in a blender), blend everything EXCEPT the chips until smooth.  Mix in the chips and poor into a 10” springform pan.  Bake at 350 35-40 min.  Let stand in pan about 10 minutes before removing ring.

Also,since I’m having yet another epidural at the end of the week, then going on a girl’s weekend with my DIL, followed by our 32nd anniversary cruise with our DD, SIL and DIVIDENDS-I’m taking a break until mid-April.
