Okay, i mentioned in a previous blog that i’d be blogging about this phenomenal salad and here it is!!!

For the salad, mix different lettuces together (red and green leaf, some spinach, some romaine), then add craisins and clementine sections.  Grill some chicken breasts and slice them, add to salad when cooled.  Toast some walnuts in the oven but do not add them until just before serving.  Add in feta cheese and red onion.  Toss all this together, top with the walnuts and serve with the dressing.

Balsamic Dressing

3 TBSP. Balsamic vinegar
2 TBSP. fresh lemon juice
1 TBSP. Dijon mustard
2 garlic cloves, minced
1/2 cup olive oil (I start with about 1/3 cup first)

Whisk first 4 ingredients in medium bowl to blend.  Gradually whisk in oil (I don’t whisk in the whole 1/2 cup.  I check the flavor after about 1/3 cup, and then add a little at a time and continue to taste.  Once the vinegary taste is gone, I stop with the oil.  Sometimes, I use the whole 1/2 cup, sometimes I don’t).  Season dressing to taste with salt and pepper.  Can be prepared ahead of time.  Cover and chill.  Let stand at room temperature 15 minutes before serving.  Rewhisk before serving.

Oh, the wonderful flavors going on in your mouth while you eat this salad is heavenly!  I hope some of you will try this and tell me what you think!  It’s rare that i become so excited about food, but this salad is a definite exception!
