As you might have read on Sunday’s post-July 4th is on my mind.  Probably all of ours!  It’s a fun holiday. Lots of colors, activities, celebrations.  Whether you are attending or hosting-there are so many ways to go!

Does your crowd enjoy the stereo-typical hots dogs and hamburgers?  How about the more upscale salmon, steak or chicken-maybe ribs?  

The point of the holiday is to have fun and stay cool.  This is probably why so many people use a grill-anything not to have to do the cooking for the day inside.  Probably why store bought angelfood cake, berry mix and cool whip are a standard at the dessert table.

Most years, as I mentioned in Sunday’s column-I bring dessert.  We celebrate my mom’s birthday and even throw in my sister’s anniversary-not this year!  Our nephew is in Germany as an exchange student, my sister and niece are using their time share in Maui, my brother-in-law is working on a court case for a client and our son is working.  Which leaves it at our daughter and her family and us.  

Since gas prices are so high-we told them to stay put and so will we.  I’ve decided to take advantage of the fact that my husband and I are actually getting a 3 day weekend off together.

I’m going to make some grilled steak (that’s for hubby, cuz no way is what’s cooking into the red meat thing), some grilled sweet peppers and I’ll grill some artisan bread to make steak sandwiches.   I’ll have some fresh tomato, red onion and spinach to add to the gourmet sammie meal.  

Dessert?  Hey, berries are great with some flavored iced coffee.

We‘re keeping it simple, tasty and with any luck-cool both inside and out.
