It’s going to be a rather tough week.  My parents, sister and niece are arriving any time now and they all have very serious dietary issues.

Mom: diabetic, heart, kidney and diverticulitis issues and limited to what types of EVERYTHING she can eat AND I may not use any salt.

Dad: can’t eat ANY spice and he hates veggies and drinking anything other than decaf coffee and Lipton iced tea in the bottle.  He also has diverticulitis.

Niece:  has a serious case of celiac’s.  No gluten obviously and she “can’t tolerate” the texture of mushrooms, tomatoes and onions.

Sister: on a low-carb and fairly gluten-free diet as well.  also has diverticulitis.

Dinner tonight?  DH will grill chicken quarters with absolutely NOTHING on them.  DDIL is making a low sugar version of her yummy red cabbage slaw and I bought gluten free tortilla chips in 2 flavors and also will probably make brown rice-for those who can’t/won’t/no desire to eat the chips.

Please think good thoughts for me, I have a feeling I’m going to need all the help I can get.
