Good day one and all!

I’ve had reports that some people are having some cooler weather-not here in Orange County CA!  We‘re finally having a heat wave.  Yes, it’s just about October and summer has finally arrived.

Of course it’s an Indian Summer.  But that’s okay.  I’ve decided to make some nice thick soup for dinner and serve it with some homemade cornbread and honey.

Have you heard of Beaver Creek soups?  They make what they like to advertise as “rustic gourmet” bags of easy to put-together soups.  I’m trying one tonight.

By now you all know I prefer fresh veggies and homemade to any help-but after the last few weeks, having to go in the market with my MIL yesterday and my 7-1/2 year old PT Cruiser breaking down this weekend-I’m so not above getting a bit of help with dinner tonight!

The one I bought says to add ground beef and a can of tomato sauce along with the water.  Sorry Beaver Creek-I have some sausages that need to be used-so I’m slicing those up in its place.  As for the tomato sauce.  I prefer Muir Glen diced tomatoes, so in they go.  I also have a lot of spinach that will start wilting in a couple of days-so I add several cups of that in before I serve it up.

As for the cornbread.  I always keep some frozen corn on hand-I’ll add some of it to my batter.  

See, told you all long ago-I simply do not follow recipes well!
