Even when you‘re looking forward to vacation-it’s really nice to come home and eat “normally” in your own kitchen!

After 5 days away-the first thing we did (after retrieving one p-o’d cat and one stressed out dog) was go to the market!  We didn’t want to eat out, we just wanted to sit down and relax with food that wasn’t the regular fare we enjoy.

Of course at my sister’s, we did eat the first dinner at her home, but my parents insisted on going out.  Truth-those two bagels were the most carbs I have eaten at breakfast in months!

By the time we got to Laughlin our stomachs weren’t working right and we had to find decent restaurants where outside of a Claim Jumpers and the one we settled on named Bumbleberry Flats-good food was hard to come by.  We even went to a very popular sandwich shop.

All in all-too much carbs, not near enough fresh fruits and vegetables and our bodies suffered greatly.

Once home and enjoying the look of our now produce filled refrigerator we made some grilled tilapia, grilled corn and grilled zucchini.

Tonight-believe it or not, we didn’t eat a single BBQ rib while gone, so we‘re trying some pork brisket ribs rubbed with the ever-famous “bone-lickin’ good” rub.  We bought a lot of corn, so those are ready to hit the grill as well as some more zucchini-I’ve just switched out what I have on them all.

Tomorrow we‘re having the kids over.  I’m trying out an espresso rub we found during our travels on a roast, spinach salad and since our son hates corn on the cob (???)I’ll either bake some spuds or make some orzo.

It’s finally and officially summer!  For us, here in the city closest to the sun, it makes no difference.  Dessert will be some grilled pineapple drizzled with some cactus honey we found.

And now, back to getting “back to normal“.
