I’ve been over “complicated” for a very long time.  

I don’t feel the need to start days in advance to create dishes, test new recipes for consistency and stand on my feet for hours to wrap the perfect egg roll or handmade ravioli.

Easy is the norm for my lifestyle.  That said-I still want delicious food-as with many professional chefs, (I am definitely a home cook)I agree that the best thing you can do for anything you serve is buy the best you can afford, prepare it simply and let it speak for itself.

In our home that means fresh produce served raw, grilled/roasted and with some fresh herbs and spices.  Proteins simply grilled with matching prep the same.

Anyone who likes oatmeal will tell you that homemade is best.  It only takes a few minutes and it is so versatile that whatever it is you like for your eye-opening meal it will handle!

I love to use the “Hungry Girl” ever growing bowl method: use 1 C each of unsweetened vanilla almond milk and 1 C water.  Still in 1/2 C oats into the cold liquid with a dash of pure vanilla and a dash of salt.  Cook over medium heat for about 10-15 minutes.  Then-add fresh fruit, a bit of peanut or other nut butter, top with toasted nuts, coconut, whatever literally floats your boat!  Warm, easy, simply and oh-so-good for you and filling.

More of a toast/egg person?  Try a really good multi-grain and pretend you‘re a kid again and make it “birds in a nest” style!  Top with some hot sauce to rev up the old metabolism with some fresh fruit on the side and you will make Dr. Oz proud.

Dinner?  Either use your crock pot and enjoy the aroma when you walk in the door or create “foil” pouch dinners that work well in either the grill or the oven!

The point is-we don’t need to think of cooking as an Olympic event where we work hard to gain everyone’s “10” approval rating.

Make it simple, clean and healthy and the rest will follow.
