I love to help people and I love to cook, and to put these together is truly a treasure.

A few weeks ago I interviewed Heather MacKenzie Densmore for the 2nd time.  The first is when she won as fundraiser of the year for her work with Habitat for Humanity.  This time it was to talk about her work a lead for the Junior League of Orange County Cookbook.

It’s the first in 20 years, all proceeds to the JLOC charities and it’s a beautiful coffee table book.

I couldn’t help but look through and put post-its on the pages that had some “have to” recipes to try. The first one was The Golden Truffle’s Tortilla Chicken Soup.

Here’s the recipe:

1 qt. chicken stock
S & P
8 corn tortillas, julienned
1 jalapeno, minced
1 shallotm minced
1 tbsp evoo
2 eggs, beaten
1 tsp chopped chipolte
1 bunch cilantro, chopped
1/2 C crumbled cotija cheese
1/2 C sour cream

In one pan, bring stock to a boil and season with S & P to taste.
Saute the tortilla strips, jalapeno and shallot in evoo until softened.  Add 1/2 C stock, eggs and chipolte and cook over medium heat until the eggs are soft-set and tortillas are firm.  DON‘T OVERCOOK.  add cilantro and mix well.

Scoop the egg mixture into the center of 4 bowls and ladle the stock over the top.  sprinkle with cheese and top with sour cream
