I haven’t blogged about chocolate in awhile. The year is new and I, like a lot of people, are thinking about being healthier. When your profession is chocolate that poses a challenge.

I’ve set my personal and professional goals for the year and I think I’m off to a pretty good start. I have a new treadmill so I can still walk when the upcountry rain sets in. I’m cooking differently. I’m eating smaller portions.

But I’ve been thinking about incorporating my healthier lifestyle into my work. I want to continue making chocolate but I want to make items that I can feel good about eating. I want my treat with a little added health benefit on the side.

I’ve never touted chocolate as health food. I still don’t believe it is. The last registered dietition I talked with about its benefits told me in no uncertain terms that one has to consume a lot of chocolate to get its healthy benefits. The fat and calories consumed in the process would just counteract any benefits. I tend to believe her with that PhD next to her name and all.

So, in keeping with my goals for this year I’m using less butter and cream in my confections. I’m using more dark chocolate. I’m adding nuts and dried fruit. I’m using organic sugar for my caramels. I’ve never used corn syrup or chemical preservatives. I never will.

I hope this doesn’t put anyone off or sound like a sales pitch. But, we can talk about anything here, even what we do for our professions. So, here goes.

    • Cynthia, you KNOW I’m one of your biggest fans!! Your chocolates are on my Bucket List!
      All I ask is you don’t forget about those of us (okay, me) that prefer milk over dark chocolate. I like dark chocolate, but milk chocolate is my preference.
      Also, I know that the person you spoke with has lots of knowledge as far as what’s healthy and correct portions. BUT, if you EVER need anyone to try and consume as much chocolate as possible, purely for research purposes, please think of ME! estaticestaticestatic

    • Cynthia, I was updating my calendar the other day and decided this year, instead of sending flowers to my mom and mother in law this year, I am going to send your chocolates.
      I normally send them both flowers for Easter, Mothers Day, Birthday’s ect.
      In fact, it will save me a little money and I think they will be pleasantly surprised.

      Cynthia sent a box of chocolates to my Aunt in Florida for Christmas. OMG! She has NOT stopped talking about them ever since. She is 92 years old and has never traveled, so the fact that the chocolates were hand made and from Hawaii was huge for her. She only allowed one person to try them and she has been eating one a day or so.
      My mom says she SHOWS everyone who drops by to visit her chocolates, but she won’t offer them one! estatic
      Cynthia really made her day. I could not have sent a better gift to her then if it had been flowers. I plan to send her another box so she can eat the first ones up!

      Cynthia, I have a chocolate/mocha soap scent that I want to send your way but I don’t have your address. I finished mailing all my other samples today. I am thinking we could put together a killer Valentine’s Basket with your chocolates, Hannah’s soap, and Lucinda’s candles - the chocoholic paradise.
      With your healthy chocolate options, I might just have to fudge (no pun intended) on my commitment, and order anyway!

      I knew a lady in her 90’s who still drove. We called her “the ambassador” with that big old car of hers. I think it was a Lincoln

    • Have you heard about the new chocolate product that has come out? I just happened to see a brochure and there were samples of the chocolate. Have not tried it or read up about it. Xocai...it is the acaiberry and chocolate together.

    • There must be health benefits to eating something one loves so much.  I’m sure it has something to do with endorphins.  I will never ever limit my intake of chocolate.  Life is supposed to be enjoyable, and chocolate certainly is that.
