I don’t know about you-but the week after vacation (or any life changing event like having an addition to the family), I drag.

This week-I made some mighty easy dishes.  Monday-I made some tilapia, steamed artichokes and spuds.  Russet for my sweet potato hating hubby and a sweet potato for me.  Tuesday, I found a package of chicken thighs.  It was really cold and nasty out-so I marinated them in what was the remainder of a bottle of lite Asian sesame dressing and baked them.  I served it with a lite Asian cole slaw and some plain old rice pilaf.  I did add some minced carrots and celery to it though.

Wednesday and Thursday-talk about lazy!  I retrieved the ham bone I’d been saving from the freezer and made a very big crockpot of my beer laden split pea soup.  Okay, I also made enough oatmeal-applesauce muffins to serve with them.

I was going to serve it tonight, but hubby was already balking last night, so I guess that thought is totally out!

So tonight-I’m grilling (or baking, since the weather is looking pretty darn iffy outside my office window) some salmon burgers.  I bought some of those hi-fiber, low cal sandwich/bun things and I’ll make a “burger bar” with spinach, tomatoes, caramelized red onion and hummus.  This way it will serve double duty-we can make our own spinach salad on the side!

    • Hmmm....this was a bad week of dieting for me!

      Monday- Pizza altho mine was veggie
      Tue- caribean chicken over rice
      Wed- Hamburgers and salad
      Thur- chicken fajita wraps
      Fri- Toasted ravioli with marinara
      Sat- whatever was left in the fridge
      Sun (today) grilled chicken, veggies and salad

      Here is my only bbq recipe:
      Brown center cut pork loins, throw in slow cooker on high loaded with honey bbq sauce for 8 hrs, so tender and yummy.
      I usually make enough so we can have sandwiches the next day.

    • saturday sounds like you were good Vikki!  Yesterday was actually not a great day for me-we went to Daphne’s and my coupon was for a 2 gyro street pita w/ fries!  egads.
