Hope everyone has had a great few weeks.  

I’m back to doing things one handed.  I managed to actually trim broccoli for last night’s dinner.  I also managed to make the rice pilaf.

Since I won’t be getting the stitches out for another 10 days-I won’t be doing much in the way of cooking much more than this.

It was easier to work with a cast.  Really.  Nothing touching the broken bones and if it did, I didn’t feel a darned thing.  Stitches are tight and in my palm-so the wrong move of the hand or forgetting and picking up something causes quite the scream and pain.

I have some great healthy recipes I’m wanting to try:  healthy KFC chicken for dh for one.  He loves fried chicken and by now, you all know where I stand on greasy, fried foods.  So eventually, this will be on the dinner table. And it’s Dr. Oz approved.

I also have Rocky Road Softies via Hungry Girl that I want to try. That and her recipe for healthy Orange Chicken and even chocolate chip muffins.

As of yesterday-I’m out of hummus and I have NOT mastered cutting and peeling carrots and celery, so I’m really hungry!

At the least, I wanted to check in with all of you and let you know that typing is rather awkward and difficult at the moment and I’m keeping it on the side of precaution until the swelling comes down and the stitches out!
