Anyone who knows me (in the flesh, not just online), knows I love my greens-especially spinach!  But it’s not the only green in my fridge-in fact, the last few months kale has become quite the favorite around here.

Truth is, Adam, who says he craves my spinach/cauliflower/white bean salad, says his new favorite it my version of True Foods Kale salad.

It is really good.  So kale seems to be the new spinach.

I’m looking to branch out though.  Here’s one that my husband enjoyed.  Quite an endorsement from the man who tried to convince me that I didn’t need to go to the market because the freezer was full of steaks.  ohhhh

Here’s a recipe that kind of combines the white bean salad with the kale and it’s warm for the soon to be enjoyed fall weather:

Ingredients:
1/3 C diced Canadian bacon
1 tbsp. evoo
6 C chopped kale
1 15 oz can white beans (northern, cannellini)
1 C chicken broth
1 med. onion chopped
s & p to taste

In a large skillet sprayed with evoo, cook the bacon until it’s golden.  Add the onion and oil and sauté about 5 minutes or until soft.

Add the rest of the ingredients, stir and cook about 10 minutes until the kale is tender.  season to taste.

That’s it!  Serves about 6.  140 calories a serving.  6 grams of fiber and 8 grams of protein.
