Life is getting there.  Nothing to brag about but it is improving.

While I still look bruised, I’m less battered.  We even managed to put together a “family” dinner between my husband and I!

Our son, daughter-in-law and grandsons enjoyed the quick and easy meal with us.  Our daughter and son-in-law went out for the evening.

It was a combined effort, since I’m still “on the mend“.  I put together a quick rub for some pork chops:

equal parts of cinnamon, cumin and garlic and added some sea salt to the mixture.  While the chops let the rub do its thing-my husband heated up the grill.

Sam put together a salad of arugula, spinach and tomatoes while I mixed up a quick and easy balsamic vinaigrette:

1/2 C evoo
1/3 C balsamic vinegar
1 tbsp. dijon mustard
1-1/2 tsp. minced garlic
1 tsp. sea salt
1/2 tsp. ground pepper

Since the kids only wanted the tomatoes-they were on the side with some plantain chips to add some crunch to the salad.

The kids requested tater tots (they are their grandfather’s grandsons).    

It was a quick but very satisfying meal.  We passed on a formal dessert-as I really haven’t been up to baking.  But I did offer (and 1/2 the crowd loved the idea)hot chocolate with some cute snowman marshmallows on the top.

If this accident has done anything-it has reminded me that the simplest of meals are the most delicious.
