Hard to believe, but Memorial Day is already here.  At one time, this would have been my maternal grandfather’s birthday weekend, but nowadays-it’s just another holiday.

An important one to celebrate just what our men and women in uniform do for the safety of our country and its occupants.

Usually, we fire up the old grill.  We seem to be very good at that.  Yes, the Nadel clan loves the taste of anything off the rather haggard Vermont Casting out back.  

This year will be the usual.  Except that it will probably be just the hubz and me.  And this year, he’s working until 6.  That’s okay-I’ll have the following meal prepped and ready for him as he walks through the door:

Chicken-marinated in 1/4 C soy sauce, 1/4 C evoo and 2 tbsp. of Montreal Steak seasoning.  I’ll start that on Saturday.

Zucchini simply sprayed with some evoo and sprinkled with both salt and pepper and brushed with some minced garlic. These will only need a mere 3-4 minutes a side.

Potato packages:  After washing and drying 2 baking potatoes, I thinly slice and divide them.  1 thinly sliced onion and a bunch of minced garlic and salt and  pepper.

In a double thick ply of foil, spray it with some evoo (or brush it on)layer the ingredients and top with a pat or two of butter or margarine.  evoo is also a tasty way to go.  Seal the packages tightly. Grill about 10 minutes and turnover and let it go another 10 minutes.

A simple meal, but it’s delicious.  For dessert-I’m sticking with some grilled pineapple that has been brushed with some maple syrup.  

I’m saving the red, white and blue dessert for July 4th!
