Veggies are paramount in my household.  I serve so many that after I’ve gone to the market the fridge has a hard time staying shut for a couple of days!

Now yes, I do serve naked veggies at times, but I usually like to put out a bowl of salsa or hummus for those who like to dip.  Both are easy to find in various forms at the market-they‘re delicious and healthy, so they‘re staples in my fridge as well.

But here are some of my family’s favorite ways for me to dish out various vegetables:

Broccoli-after steaming and draining, mix with:

2 Tbsps olive oil
3 tbsp fresh lemon juice
1-1/2 tsp minced garlic
1 tsp kosher salt
a couple of shots of hot sauce.

puree the garlic with the salt then stir in the lemon juice and hot sauce and whisk in the oil.

Spinach-for the most part, I love spinach in a salad, but I toss it in soups, a tasty salad with cauliflower, white beans and feta cheese with a vinegarette or sometimes stir-fried.

My son loves it best when I do it this way:

Heat up the wok and add just about a teaspoon of oil, add a fair amount of minced garlic and a bit of ginger.  Have soy sauce and toasted sesame oil close by and ready to go.  Add the spinach and even before it starts to wilt-stir in about 2 tbsp of the soy sauce.  Turn off heat and drizzle about 2 tsp of the sesame oil over it and give it one last stir.
Serve-remember to overcook your spinach is a crime!
