Happy Friday!

I had to get a new cast Wednesday.  Seems my “shower bag” had a couple of pinholes and I wound up being in a very wet and soggy hand holder.  

This cast gave me a bit more finger freedom-hence the easier typing, sort of.  But it goes clear up to the elbow, so it’s not as easy on the clothing options.  

Just wanted to let you know-if you ever find yourself in this predicament, check out your butcher counter for main dish ease.

Besides already mentioned items like pre-packaged and separate portions of things like sausage, hamburger (turkey and beef) patties, there’s also salmon patties and individually  flash frozen fish fillets of several varieties.

But your butcher counter has some great ideas as well-stuffed pork chops or salmon fillets, carne and pollo asada and some have fresh crab cakes as well.  I’ve also been looking into the deli counter for something other than tater tots and rice.  You can only do that so many times.

I found some great healthy options!  Low-cal cole slaw, tabuleh, potato salad made with a vinegar base rather than mayo, just to name a few!  Several couscous and quinoa salads were also there.  

Let’s face it, these are all easy to make dishes when you have two hands, but with one-peeling a darn carrot and cutting celery is presenting problems.

So even though I’d rather make these dishes and save a few dollars-at this point I have no choice, so I’m going with the flow.

As for next week-I’ll be leaving town for a split business trip and to attend my grandkids birthday party, so have a great week and I’ll post again on the 8th.
