Well, the big food weekend is almost here!  Here are some other side dish sides you may want to try:

To Die For (and low fat/cal too!) Mashed Potatoes

servings: approx 8

3 lbs russets, washed peeled and cut into like sized pieces
1 lg head cauliflower, in florets
1/4 C ea-margarine/soy milk (remember we don’t use stuff from a cow, but feel free to use the “real” stuff)
kosher salt
1/2 tsp freshly ground pepper

Get 2 large pots.  In 1-add 1-1/2 C water, bring to a boil.  Add the florets, lower to a simmer and cover.  steam til very tender.  about 15 minutes.  depending on how small you cut the veg.

Drain and puree with the margarine, milk, pepper and a tsp of salt.

At the same time in the other pot.  Place the potatoes in and cover w/ cold water and sprinkle a TBSP of salt over them.  Bring to a boil and simmer until just FORK tender.

Drain well.  I use a ricer to mash.  Combine the cauliflower mix and spuds. Serve!

Need another “different” salad?

Try this one:

Cauliflower, Spinach, White Bean and Feta

1 lge cauliflower in small florets
1 9-12 oz bag baby spinach
1 can cannelli beans, drained well
1/2 C crumbled feta (I use either goat or sheep)

Dressing:

2 Tbsp balsamic vinegar
1 Tbsp fresh lemon juice
1/3 C evoo
1 tsp. fresh mince rosemary (if you don’t have any-it’s yummy w/o it)
1-1/2 tsp kosher salt
1/2 tsp freshly ground pepper

In a very large bowl combine the veggies.  Once dressing is made-just pour over the veggies and mix well.  The spinach will start to wilt, so figure on serving the salad after an hour!  Before serving-top w/ the feta
