Cooking for one is okay.  I’m finding that since it’s just me I’m not looking to over do-hard to overdo when you‘re down a hand and an opposing shoulder.  

I did have my parents over for dinner-but since they have lots of “don‘ts” on their diet-it was simple and plain grilled salmon (read that “not even salt and pepper“), coconut cole slaw and coconut milk and chicken stock infused barley pilaf.

To cover my coconut theme, I bought some macaroons-dad’s favorite.

Since I have to try and use what I’ve got, I’m finding that I have to use up the plethora of salmon and turkey patties that I always have on hand for quick meals.  Sometimes I just forget to take something out to defrost and these items easily go from freezer to grill to plate in under 20 minutes.

My sister was shocked-she came over to give me a shot of Humira and I proceeded to tell her to please, please-shop my freezer and take some of the overload of red meat my husband stuffed it full of-she found about 30 pounds.

No kidding.

My husband was furious!  LOL.  “Do you know how hard I worked to get those deals????”

Really?  Well, you‘re now living 380 miles from this appliance-with no way of getting a refrigerated case large enough to hold it all and fit in anyone’s car to drive it out to Anthem Arizona.  So off it has gone to find a new family.

What’s left besides the aformentioned “burgers“?  Some chicken sausage, salmon filets and I did keep a couple of one serving steaks for me.  I also found a loaf of double fiber bread and some long forgotten bags of ore-idas.

Tonight?  I did take out a chicken 1/4-so if the prospective buyer leaves early-I’ll take off the skin and coat it with some BBQ sauce and grill it.  I’ll use the rest of some spinach and tomatoes for a salad and some of those ore-idas.

Strange, when it’s just me-I’m fine with a nice big salad or an omelet with lots of veggies and toast.

That said, I sure hope I’ll be re-united with my husband soon and be in a new home with a great kitchen that I can have all the kids and grandkids visit soon and cook a nice big meal.
