Around this time of year I’m often asked if I make bunnies and eggs for Easter. The answer is no, I’ve never really gotten into this type of chocolate making. That’s not to say that Easter doesn’t hold a special place in my heart. I have beautiful memories of my father hiding eggs year after year in the exact same places in the house only to appear baffled that we found them so quickly. And, my grandparents always gave us hollow chocolate rabbits. When Reese’s peanut butter cups were molded into the shape of eggs, my mother loved the novelty and bought them for the coffee table candy dish. Pastel colored sugar coated almonds - the kind served at Italian weddings - were sprinkled around our table.  

But, as a confectioner, my favorite Easter candy to make is passion fruit truffles. Now, you may think that passion fruit is associated with Valentine’s Day. After all, passion and romance go together, don’t they? But as I researched the history of passion fruit I discovered that Cupid never entered into the picture as the flower and subsequent fruit received its name.

The passion fruit actually received its name in the 16th century by Christian missionaries after they arrived in South America. The appearance of the flower reminded them of the death of Christ. In that wondrous and beautiful flower they saw the disciples, the crown of thorns and the wounds on Jesus’ hands and feet. Thus, the name passion flower.  

After the flower opens and blooms in its brilliance, it begins to close and what emerges some time later is a hard shelled egg shaped fruit. Sometimes it’s purple, sometimes it’s yellow - there are several varieties. This fruit is the basis for my signature truffle, the lilikoi creme.

In Hawaii we call passion fruit lilikoi. Cut one open and the fragrance is intoxicating. It’s exotic, a little pungent, bright and somewhat citrus like. There are many small black seeds in the center surrounded by yellowish orange flesh, stringy and fibrous. But strain all that into a vessel and you have the nectar I use to make my truffles; lilikoi.  

If you want to try this very special fruit yourself, I have a recommendation for you. Go to this website [Link Removed] and find someone in your area that sells their passion fruit puree. It will most likely come in a 30 oz frozen container. You can defrost what you need and put the rest in the freezer for later. If you have a favorite recipe for something that calls for lemon juice, you can substitute passion fruit for a new and different experience.

      My only problem with Cynthia’s Passion Fruit Truffles is that I have to have three at a time.

      Yes, the passion fruit would be a great substitute for lemon. I hope you can find it. Perfect Puree is in Napa Valley and they‘re a nationwide company. Their products are all over the place. If you have anyone friends in the bar business, bar tenders use their things all the time in making specialty drinks.

    • The passion fruit scent is unmistakable and so memorable!   About 5 years ago we went to a little restaurant near a floating bridge in Vermont and had a white layer cake with passion fruit puree between the layers...when I close my eyes i can still remember how delicious that cake was!   and how fabulous it smelled!    I love reading your blog and your wonderful descriptions.   Thanks for triggering some great foodie memories!   I’m going to have to place an order for your truffles!
