This Week in My Cooking Blog ...

I just wanted to invite all of you to my Cooking Tip of the Day blog... last week had a lot of useful tips for holiday party planning, pasta tips, prepping ahead and much more.

The recipes included pasta dishes, absolutely to die for Coconut Macaroons, Sweet and Spicy Cocktail meatballs, just to name a few.

      I just got back online... we made the trek from south Georgia to upstate NY.... 17 1/2 hours in a car with two large black labs... but it could have been worse... we only hit semi-bad weather for about 1/2 hour... so anyway... that’s why I didn’t respond sooner.

      Darla... I’m always up at the crack of dawn.... LOL

      Shopgirl... ahhh ... my meatball recipe hooked my man...LOL

      Vicki... I would love to help you... do you have anything in mind?  Do you want a meat with nice sides ..beef or pork roast, ham or turkey... or do you want to cook a meal... chicken marsala is always a hit when I make it... and very easy... serve it with a salad.. crusty bread... you can wow them with a great dessert... let me know what you are looking for and I’ll check my recipe file... send me a message.

    • I’m thinking ham since it can also be eaten cold. I would like to have a hot meal for my family and what friends show up. But I would also like to be able to serve food buffet style for later in the day people.

      Any thoughts would be appreciated.

      I think ham is an excellent idea....  

      as for sides... I’d pick one or two of side veggie dishes...here are some examples...asparagas with hollandaise sauce.... or string beans almondine.... broccoli-corn casserole...corn pudding...corn casserole...scalloped corn...skillet acorn squash (made with pecan pieces, orange juice, brown sugar, cinnamon and butter)... candied carrots (made with brown sugar and butter)...apricot glazed carrots (cooked julienne carrots tossed with apricot preserves)

      pick a type of potatoes....
      potatoes au gratin (cheesy)... or scalloped poatoes(cream sauced)... or mashed sweet potaoes...pineapple sweet potatoes (cooked sweet potatoes..peeled cut into chunks and glazed in a butter, brown sugar and crushed pineapple glaze...not hard to do)... all go well  

      I’d include a jello mold or salad,fruit salad, cole slaw, deviled eggs or salad

      Bread or rolls (cornbread is great with ham and extremely easy)

      Ham goes extremely well with cranberries, apples and pineapples.... glazed veggies...cheesy and cream sauces and corn ....I’d essentially pick one from column A, then Column B...etc....  

      You mentioned wanting a buffet... did you want to include another main dish?  If you do... a creamy pasta dish would work very well... I published a recipe last week... baked rigatoni with Bechamel sauce (basically a little fancier baked mac and cheese made with fontina cheese and rigatoni)

      Keep in mind a couple of things... skill level for one... timing... if you pick something that will require some work.. then pick another item that is very simple... also don’t be afraid to use some store bought elements...like cole slaw...

      So think it over... make a list... even add to what I gave you... then pick some must haves and work around that... I can give you the recipes...  

      As for appetizers and dessert... we can work out those after you make your dinner decisions...
