Since last week-it seems our menu has grown!  I have a feeling I’ll be sending home some goodies and still have leftovers.  I’m sure your home is close to being the same.

My husband and I love soup-so I’m definitely going to be saving the carcass, shredding the turkey and creating some Turkey Rice soup.

If I have enough-I’ll thicken the broth, add some roasted veggies and top it with either some corn muffin mix or a quick savory crumble topping of whole wheat flour, chopped nuts, herbs and evoo and bake until nice and brown and bubbly for a healthier version of pot pie.

Should there be any mashed potatoes left, I might make it into a poultry version of shepherd’s pie.

Other great leftover meals are sliders (leftover rolls)made with turkey and the homemade whole cranberry sauce with some of Sam’s very delicious red cabbage slaw.

In all honesty-while making the soup, again, should I have potatoes left, I could use them to thicken the soup.  There are just so many ways to enjoy the leftovers of Thanksgiving without just re-heating any of the dishes.

I’m pretty sure I’ll have a good amount of the homemade cranberry sauce left, it will be fantastic and different after warming it up and serving over some Belgian waffles.  

It will also be a great swap for mashed banana in my baked oatmeal.  

After hosting my favorite family for my favorite holiday-the leftovers are the best part of this celebration.  Looking forward next to both Hanukah and my husband’s birthday!
