It’s another holiday-President’s day.  I’m not going quite red, white and blue, but almost.  I hope you all had a great Valentine’s day!  We saw a musical based on Elvis songs and Shakespeare’s Twelvth Night.  Came home for our special dinner and called it a very successful day.

Today my “white” is leftover chicken.  For “red” I’m using some pasta sauce and I’ll serve it over some barley pilaf for a bit of a change.

It’s sure not blue, but I have some zucchini that sure needs to be used, so I’m doing the usual roasting of it with some minced garlic, ground pepper and sea salt with just a bit of a spray of some olive oil.

Green is close to the blue spectrum, isn’t it?
