Happy beginning of February!

I’m about to take off on a business/pleasure trip until next week-so today is all about cleaning out the fridge!

Actually-I will admit, due to the hand thing-I haven’t been doing any of my usual creative dishes and I’m almost totally out of bake and serve foods, so my two days left are on the meager side.

So meager in fact, I just came back from the market to round things out.  I bought a huge idaho potato and a sweet potato and a bag of ready made salad.

I took out some chicken jalapeno sausages-enough for dinner tonight and for my husband to take 1/2 of the baked potato and leftover sausage for his lunch tomorrow.  Tonight will be grilled sausages, potato (hubby the idaho, me the sweet) and the bag o‘greens.

Tomorrow night, unless I hear a great amount of objection followed by a “we have a two for one to...” I’ll be making some omelets, frozen veggies (oh my goodness, I had to buy a bag to make this possible!) and tater tots.

Oh-while I’m taking up room in your day, let me help out the wonderful reader who asked about using applesauce in lieu of fat in baking:

It works really well-but only substitute 1/2 of the fat.  Now I have on occasion made a full swap, but it depends on what you‘re baking!  Cookies will tend to get a bit to hard to take off your sheets and may even become either tough or crumble-again depends on your cookie!  The full sub works quite well in brownies though.  So does using mashed bananas and a jar of baby prunes.

And now, I’m off to the Vegas Furniture Mart and to celebrate our grandsons 2nd and 3rd birthdays!
