Shrimp diablo-at least this is what I’m calling it.  Sounds fancy, no?  Obviously-you’d expect to have a “kick” to it due to the “diablo” part.

What is it?  Something so simple that you’ll love it:  Shrimp in a spicy sauce over either pasta or rice.

We love “$5 Fridays” at Safeway (it was Von’s when we were in Cali).  DH has Friday’s off, so it’s fun for us to do our shopping and see what bargains we can procure.

This week-previously defrosted large shrimp for $5 a pound.  Love shrimp.  Decadent, rich, low in calories and you get a lot of bang for your buck, really.  We bought a pound.  Thankfully, it will serve us for a dinner and I’ll have more than enough for a lunch for DH at work.  

I know you‘re thinking it should feed four-but they‘re in the shells, so that will take off some of the weight.

Save those shells forn a quick broth!  

For this recipe, I’m using a jar of marinara and whole wheat linguine.  To the sauce add:

Thinly sliced bell peppers-figure about 1/2-3/4C per person

Sliced mushrooms-again, about 1/2-3/4 C per person.  Any kind you’d like.  We love the baby bellas, but white is fine or any other mix.  You could really fancy it up and use some gourmet types!

For the spice, depending on your ability and love of heat, use some chili flakes or favorite hot sauce.  Now my husband gets the hiccups pretty easily if I put it in too strong.  I’m okay with heat, but I don’t want my mouth burning.  So start with 1/4-1/2 tsp.  and taste after the sauce is heated.  

While the sauce and veggies are heating-clean and devein the shrimp.  They only need about 3-5 minutes (depending on their size), so don’t stir them in until the pasta has that amount of time left!  No one likes a rubbery crustacean!

If you don’t want pasta-serve it over some jasmine rice or brown basmati.

Like all my “recipes“, it’s a simple guide, improvise if you‘re family hates mushrooms and peppers.  Hungarian peppers are delish.  Prefer sweet onions or slivered green beans-go for it!

The point of this column isn’t so much to say-“this is the best, eat it this way“, but to make us think about other ways to enjoy our favorite dishes.  

If you don’t want the carbs, I’ve served it over spaghetti squash and it’s just as tasty and filling!
