Here we are-exiting May and looking at June!  Father’s Day, Summer, Graduations and probably a few weddings are arriving and quickly.

Even though today is Memorial Day-and hopefully we all will spend a bit of time praying for those who are protecting our country, we are also enjoying some beautiful warm weather and thinking of some summer favorites!

I love berries, so I started the day by serving up a simple breakfast of cereal with fresh strawberries.  Later tonight we are taking the “busman’s” route for the ribs.  Costco had a coupon for Tony Roma’s babybacks and my husband loves that restaurant. Unfortunately, all of them have closed here in our neck of the woods-so this was a way to get him one of his favorites!

A quick few minutes on the grill and they’ll be hot and delish.  We went to a family dinner last night and came home with a LOT of HUGE baked potatoes-so I’m going to slice up one, chop some of a red onion and mix them with a bit of garlic, pepper and sea salt and make a foil side dish with them.  Since the potatoes are cooked, it should only take about 15 minutes for the packets to heat up.

Our veggie will be some of the platter I brought last night with some hummus on the side.

Our favorite sides during the summer are usually simple, cool and fast.  Let’s face it, even foodies want to keep cool as the weather heats up!

      Lately we’ve been grilling pineapple as a side dish. We were in jeopardy of losing our entire Maui pineapple industry. Someone came in and saved it so I make sure I buy at least one locally grown pineapple every week.

      I did a dessert one day that I had seen on Giada De Laurentis’ show - grilled pineapple slices topped with warmed up Nutella thinned out with a little cream and then topped with toasted mac nuts. Delicious!

    • I saw that show Cynthia-looked fantastic!  I’ve grilled pineapple and peaches-just using either some pure maple syrup or brown sugar.  the macademias are a must!  dh gilds it w/ some ice cream, I’m fine w/ the delicious fruit!

      btw-ds/dil will be in Kuaui starting Fri for their honeymoon!

    • Sounds delish! I didn’t know that Costco had Tony Roma’s. I will have to check it out since my bil loves them.

      The grilled pineapple sounds amazing. I used to make grilled pinapple with teriyaki shimp skewes. One of my friends will grill peaches and place them over high quality vanilla ice cream and finish with toasted pecans and a splash of Grand Marnier or southern Comfort.

    • max-our coupon read Tony Roma’s or Curly’s-think it depends are where you live.  I just heard about Curly’s the other night on a show on the Travel Station, looked pretty good.
