Turns out that diabetes cooking/eating is a huge area of interest and concern here on fab40!  

Thanks to our Linni for bringing it up and asking for suggestions.

On the comments side of the Friday’s column Frannie came up with some great ideas for snacks-which I in turn will share with you right now:

Theres also Diabetic Living magazine that gives you recipes.  Heres some snack Ideas I’d like to share.  

Here some energy boosters:
Carb-Protein snack combos  

1/2 cup cantaloupe
1/2 cup cottage cheese  

1/2 cup carrot sticks
2 tablespoons of hummus  

1 small sliced apple
and 12 almonds  

1/2 cup banana slices
and 1 tablespoon of peanut butter  

1 small apple
and 1 string cheese.  

Small amount of carbs to keep energy levels up and enough protein to help you feel full.

Also on the comments we talked about trying different nut butters-cashew, tahini (sesame paste), walnut and hazelnut.  All provide great amounts of protein, fiber and omega-3s.

Another thing that seems to be stressed on every diabetic site is the importance of variety!

    • hmmmm I think I need a snack!  I esp. like carrots & peanut butter ( I am not diabetic but love it anyway). The sweetness of the carrot combined with the saltiness of the pb is divine!  Great travel/hiking snack too as it doesn’t need refridgeration.

      variety is kinda an issue for me! lol im REALLY trying..
      my other issue is remembering to count the carbs... sheesh...
      so its VITAL that i plan every meal the night before...

    • linni-look for help on diabetes sites!  just type in diabetes support sites to google or your favorite search engine and check them out.  they’ll have free support groups, chat rooms and great ideas on how to plan out shopping, menu and even exercise!

      you might even check out some sites that help you track your carbs, proteins and all the rest.

      when I found out about my RA-I found 2 sites, both are gone now, but the 2 women I found as support buddies?  I’m still in close contact with them!

    • i will do that.. i get a bit frustrated though cause alot of times it sends you off onto other pages.. LOL  

      i need to get this on the right track, so i can get some of the weight off too.. just a frustrating time.. lol

    • I know-not w/ diabetes, but any chronic disease (for me its the RA).  You need time to adjust, learn and make the necessary changes. that’s why you need support from not just those who love you, but also from those who are in the “same boat“.  They understand from a completely different pov than loved ones.

      they hear what you‘re saying and can help w/ their experiences.

      trust me-got me through a lot.

    • remember Linni, support doesn’t have to mean a group, perse, but find someone on the forums or chats that you can get to know and agree to ck in w/ each other.  hopefully it will be someone who’s a step or two further than you are into figuring it all out and can be a mentor and sounding board.  then later on, you can do the same for someone else who’s just been diagnosed.

      One of my RAbuds was diagnosed about 18 months b/f me, the other found out in high school.  

      I like to say that no matter how wonderful my dh has been, he can’t truly understand what I’m feeling or why-that’s why you need someone who does!

      Here is a suggestion for your hubby. My Mom taught me to carry in my purse a small bag of dried fruit and nuts. I carry it with me on busy days and it takes the edge off of my hunger so I am not ravenous when I am finally able to eat lunch/diner.

      Also, try Lara bars- they are made from fruit and nuts and are awesome. I love cherry pie- it actually tastes like cherry pie. Lara bars do not have any added sugar and are super healthy!

    • exactly Linni-you need to have someone to vent your frustrations to that can see things as only one who has the same disease can ultimately do!

      again, my dh is fantastic, so are my kids, but they haven’t walked the walk-so they can’t truly see things as I do, but my RA buddies-they can!
