As promised-here is the Two Hot Tamales Tex-Mex version of a cornbread stuffing/dressing:

1 recipe (or buy) of cornbread.  Let it stand out and get stale OR cut it up and bake it in the oven at 350 until it’s nice and toasty.  Cool.  (keep the oven on)

1 lg onion, chopped
1-1/2 C EACH hominy (drained) and corn
2 tbsp chopped fresh sage
2 tsp minced garlic
1 jalapeno, seeded/deveined and chopped fine

1-1 1/2 C chicken broth

1/4 C butter or margarine

Saute the onion and garlic until translucent.  add the jalapeno and sage.  Stir in the hominy and corn.  Mix well.  Toss this mixture with the cooled cubed cornbread.  Moisten with the broth.  Baked covered for 30 minutes, uncover and bake another 10.
