Love it

Hard to believe, but tomorrow is the first day of Spring.  

Thank goodness.  I’m ready.  I’m tired of apples and pears, broccoli and squash.  

Don’t get me wrong, I love them, but I’m ready for affordable berries, ripe melons, asparagus that’s not the size of tree trunks and all the rest of winter woes.

What are your favorite Spring foods and dishes?

Our daughter loves salads with RED tomatoes-instead of the orangey looking things that don’t have much flavor.  Our son loves grilled or roasted asparagus marinated in lots of fresh garlic and olive oil.

My husband the carnivore-wants Spring lamb. He’s not that picky as to whether I serve it as chops or as a roast, but he loves it grilled-again with lots of garlic and I add a grated ginger crust to it as well.  Cuts the “lamb” richness.

Me-I’m all about the fruits and veggies.  I love the strawberries and stone fruits.  This year I have to cut back on my tendancies to buy way too much.  After all, we‘re down to 2 people and all of the foods mentioned do not have long shelf lives.

Speaking of “lives“-Spring foods tend to go bad rather quickly.  Where cabbage and squash can stay in the fridge or on the counter for a couple of weeks-asparagus and berries turn after a mere couple of days.  So bear this in mind when you‘re perusing the produce aisles.

Buy things in small amounts.  Better to go back mid-week than to throw things in the garbage or the compost heap.l

Do you have a great Spring recipe?  A special way of serving veggies or a great light dessert that features the bounties of fruit in something other than a bowl with whipped cream or on top of shortcake?
