A few months ago I got a free subscription to a magazine that I’ve always loved-Cooking Light.  This month had a host of what readers said were their favorites from years past in it.  

I’m always looking for some way of combining our favorites that ISN‘T the usual.  What a find when I saw “Chicken, Kale and Quinoa Soup“.  Seems that many people were writing the editors and asking for something that involved all three.

Even though we‘re still breaking current heat records here in Arizona-I had to try it!  We had just purchased chicken thighs at Costco and a bag of kale.  The quinoa is just a huge bag sitting in my pantry.  Add some onions, carrots and lots of garlic and chicken broth and you’ve got a yummy pot of soup.

This one started with some bacon-which (even though I used the turkey version and added a tad of evoo)pleased him no end.

Now it did take a little time and babysitting-but this one pot gave us a very plentiful dinner, a brown bag portion for my husband and I have enough for my lunch as well.  

I’ll be more than happy to put it on here-however, after a rough day of writing, chopping vegetables and being given the opportunity to drop one of my long time meds-my hands are not really up to putting it on here if no one really cares.

Sorry to be blunt.
