It’s seems like it’s been forever but in reality it’s only been about a month since I applied for a certificate of occupancy from our county. I discovered that this would involve about 8 inspections from various county employees, plumbers, electricians, money and, yes, lots of frustration and tears. But, it looks like we‘re “this” close to finally securing the permits we need to operate legally in our kitchen.

Thank you for all the support I’ve received thus far. As promised, I have some photos to share. They show the kitchen empty; we now have all our sinks, tables and appliances in place. We‘re ready. We just need the county’s blessing.

I was able to finish the 2,000 plus chocolates that are going to Oahu tomorrow for a client’s fundraising dinner. This may be a strange prayer request, but, if you have a minute would you mind just saying a little prayer for the safe arrival of these chocolates. I worked like crazy on them.

Last but not least, I’m working on a really nice selection -some of my usual flavors but a few new ones involving ingredients like Key Lime, macadamia nut praline, Kona coffee and 100% Hawaii grown cacao.
