First of all I have to say that I was warned about the county of Maui. I was told that they would do everything they could to keep me from actually being able to open my doors. I was told they would change their minds a lot about work that I needed to do in the kitchen to bring it to code, costing me more money than I originally planned on. I was warned that they make it their mission to be as detrimental to small business productivity as they can. I didn’t want to believe it but it is all true. It’s been a difficult experience. If I knew going in how bad it would actually be, I may have changed my mind.

But I didn’t and it looks as if I may actually receive a certificate of occupancy by the end of the month. All my inspections, all 8 of them, have finally passed. I’m just now waiting for the health department to enter the “A” for approval in the computer system so the permit department can make my certificate. I have a bottle of prosecco waiting in the fridge for the day I hang it on the wall!

Here are a few photos, minus my chocolate equipment. I’m waiting until this week to set up my machines.
