Since I have moved most of my things to a nice new commercial kitchen downtown, I thought I’d lay low for Valentine’s Day even though it’s a pretty significant holiday for me. I wanted to get used to the new digs. I wanted to ease into the process of being there.

Easier said than done!

I used to be able to get away with three pounds of chocolate in a machine that holds ten. Now it’s normal for me to put at least five pounds but more often than not I use seven. I have two of these large machines and two small machines. I’m thinking of adding a holding tank for tempered chocolate that holds twenty five pounds. It’s like being Willie Wonka! I love this work.

I was asked by a member about the kitchen, the process of making chocolate and I thought I’d share.
