We all have our ways to celebrate Valentine’s Day!

My DH is working until around 5 and won’t be home until 6.  I’ve been uber sick, so breathing is something I’m finally doing without the aid of humidifiers, forcing fluids and antibiotics-so I’m making a bit of an effort!

While DH surprised me with some beautiful roses already, he also stopped and bought some filet mignon as our main protein for dinner.

Honestly, not my favorite cut of meat-and it’s quite pricey.  It is tender, but almost no flavor, unless you wrap it in bacon.

Not going to happen.

So I’m taking the “chocolate approach to dinner-as much as possible, anyway.  I’ll be making a rub of cocoa powder, salt, chili powder, paprika and some pepper.  After rubbing the meat in some EVOO, I’ll rub in the, well, rub and let them sit until grill time.

Sides will be a nice spinach salad with poppyseed dressing and quinoa made in broth.  Dessert will be some amaretto brownies.

That is dinner-done.  Breakfast before work will be some chocolate Belgian waffles with sausage and some blackberry compote (Our grandsons will be spending the night, so why not?).

Sending DH a wonderful Tortilla Soup for his lunch.

Here’s hoping your special day with your loved one(s) is everything you want it to be!
