Happy Friday everyone!

I am going to say that this week has been quite a roller coaster around our home-which means that I am not as prepared as I usually am with today’s column.  Sorry!

Monday-I had an interview for a job that sounded as if the “job fairies” wrote it and plopped it in my lap.  Still hoping that the 2 hour and 10+ interview means I’m still in the top running out of 792 candidates-please say a prayer!

Then we had a very sticky family situation which has my sister and I both sure we did the absolute best thing and making us feel like a pile of manure all at the same time. Enough said on that matter-trust me.

After that, I finally convinced my GP that since I’m fast approaching my 53rd birthday and he nixed the obligatory colonoscopy on my 50th-that I would appreciate being put on the long wait list.  Guess what-surprise, wait list seems to have shortened from several months to having it in less than 4 weeks.  So I’m both happy to have it scheduled and not at all sure about it at the same time.

We also had the happy event of our nephew’s high school graduation-all the honors possible and a 4.51 average to boot!  One proud aunt here!!!

So let’s just keep it simple today and mention vegan breakfasts.  

How simple?  Let’s face it-cereal, whole grain toast with anything from peanut/nut butter and jam and fresh fruit to a wrap with veggies and hummus.  Get creative with the nut butters, the hummus, the veggies and the fruits!  Try making a whole grain and substituting the water, broth or milk with soy, almond or rice milk.  Add some vanilla or other extract!  Swirl in some pure maple syrup or agave syrup.  

What whole grains?  Brown rice, barley, millet (corn-bird seed!), quinoa, oatmeal and so many more!  Try combining some of the ones that take equal amounts of time to cook.

Things like the barley and brown rice-make up a pot the night before and package it into individual servings that you can zap in the microwave in the morning for a quick breakfast.

Hopefully next week will be a bit calmer and we can talk about the other meals/snacks in detail next week.  

Speaking of which-I will probably be posting pretty late on Monday as I’ve been invited to a press party for “A TASTE OF THE MAJORS” at Angel Stadium to introduce the all-star games menu, so while you‘re all going about the typical day-I’ll hopefully be having a grand time at the Diamond Club!
