Good day all.  I'm afraid I'm going to have another week where this will be the only column.  Please bear with me.    Our household is having some mighty heavy personal issues to deal with on top of the fun with the bathroom remodels.

Let me tell you-remodeling is difficult enough to live through, but when life throws in a few speedy curve balls, you start forgetting about how fun cooking and creating can be and you go for "what can I get on the table without my brain exploding?" in about 60 seconds.

Thankfully, hubby agreed with my column Friday evening.   We took our $3.99 coupon for a Pita, Fries and Drink to Daphne's-a local and pretty decent Greek/fast food chain.  My husband opted for the fire feta beef version, while yours truly stuck with her vegan preferences and went with the roasted red pepper hummus and veggie burger.  That's what I love about our favorite getaways-they're inexpensive, tasty and both of us get what we want out of a meal.  

Saturday I finally got the energy to take our dinner out to the patio.  We had grilled mushrooms and asparagus that I simply marinated in evoo, garlic, kosher salt and some of that wonderful mesquite flavored pepper we found at Sur La Table.  We picked up some BBQ'd mesquite chicken wings at Costco and I heated up the leftover quinoa pilaf from an earlier meal.  Some fresh brewed Paradise Mango tea and a lovely cool breeze and our evening was complete and relaxing.

Another good part about our dinner-there was enough to package up for my hubby's lunch on Monday.  Good thing too-as I mentioned we've be inundated with some unforeseen sticky wickets.

I know a few of you have messaged me asking for some ideas on new ways to prepare veggies and even some new marinades.  Hopefully those of you I replied too did try and enjoy some of them.

And now, as much as I'd prefer to stay and give recipes-my crazy life calls.  May I ask for your indulgence once more?  Please say a prayer for us-without betraying any confidences, rest assured our family could use some blessings right now.
