Happy Monday ladies!

I’m trying to at least do a few sentences here-I’m amazed at how adept I’m getting at adapting!

I was able to make some quite tasty quinoa pilaf with Asian accents yesterday.  I made hubby BBQ some Asian inspired and marinated porterhouse steaks and yellow squash.

We used soy sauce, grated ginger, minced garlic and peanut oil for the steaks and veggies.  I mimicked the spices and soy sauce into the grains and did it in chicken broth.  Made enough for my husband to package up the leftovers for his lunch today.

No baking of late-I’m not even going to try.  Too risky.

Tonight I took out some turkey basil meatloaf mix that I had mixed and packaged about a month ago.  

Here’s an excellent tip-if you pre-make things like turkey/meat loaf, meat balls, and other adaptable entrees, you are able to get dinners together without much fuss.  Especially if you happen to have one of life’s unforeseen accidents.

Thankfully I have a bag of pre-shredded cole slaw in the veggie bin.  This will be an easy side dish.  As for our grain/starch-no way am I going to attempt pasta!  Let’s face it, that would be a disaster.  LOL

I’m going to use my bag of emergency tater tots as we are getting mighty tired of rice and quinoa.
