      Try making this dinner after a long day and you don’t feel like cooking.

      Weeknight Meatball Stew
      1-12oz pkg frozen fully-cooked meatballs
      1 jar (11oz) beef gravy
      1 can (8oz) stewed tomatoes, undrained
      3/4 tsp. dried thyme
      1/8 tsp. pepper
      1 pkg (16oz) frozen vegetable mixture with potato

      Combine gravy, tomatoes, 3/4 cup water, thyme and pepper in large saucepan; bring to a boil. Stir in meatballs and vegetable mixture. Reduce heat. Cook 10 to 15 minutes or until meatballs are heated through, stirring occasionally.

      Serve with a tossed salad and enjoy.

      I have changed this recipe to suit my family’s tastes. The changes I make are: mexican flavored stewed tomatoes and instead of black pepper I use ground red pepper (cayenne).  

      I would love to hear about other flavor combinations you use.
