  • An easy way to saute shrimp or scallops

      We buy the bags of shrimp and scallops at Costco and keep them in our freezer for a quick lunch or dinner. Lately I’ve been using this method for cooking them that seem to be fool proof.

      Defrost the shellfish, take the tails off the shrimp, dry everything well with paper towels.

      In a bowl put a couple tablespoons of olive oil and whatever seasoning you like. I like garlic salt and pepper. toss the shellfish in the oil and seasonings.

      Get a non stick skillet, sprayed with non stick cooking spray hot on the stove.

      For the scallops, cook 2 to 3 minutes on each side and remove to a bowl. Cover with plastic wrap.

      For the shrimp, cook on each side for no more than a minute. Place them in the bowl with the scallops and cover them.

      The heat inside the bowl will continue to cook the shellfish, keeping them moist but fully cooked inside.
