      Beer Brine Chicken

      Wine Pairing: Moscato

      Ingredients

      Brine and Chicken
      6 ea Chicken *
      2 cups water
      1/4 cup kosher salt
      1/2 cup brown sugar...packed
      4 ea 12 oz bottles Guiness dark beer  

      Rub
      1 Tablespoon paprika
      1 teaspoon sale
      1/2 tsp onion powder
      1 tsp garlic power
      1/2 tsp ground pepper
      1/2 cup extra virgin olive oil  

      Optional

      Emeril Lagassee’s Essence mixture.
      Instructions

      In large pot or bowl mix water, kosher salt and brown sugar and stir till dissolved. Add beer and chicken.
      Cover bowl and refrigerate 20-24 hours.
      Remove and rinse chicken 1 hour prior to grilling. Rub with bbq rub.
      Heat grill to 400 degrees. Grill chicken for 7-8 minutes. Turn and grill an additional 7-8 minutes or till done.
      Serve with mac and cheese, ranch mac and cheese. or bistro mac and cheese.
