      Today is the official beginning of my 21 days without meat. I have no noble or medical reasons for doing it. My reasons are this..... to support my daughter Kylie who has been meatless for 5 years, to support my friend Melissabelle in her meatless adventures, and just to prove to myself that I can.

      So I have my veggies, fruits, greek yogurt, nuts, peanut butter and cottage cheeze all lined up. I also will be getting protein from special k in the form of their drinks and their water powders.  

      Since my diet and exercise journey requires me to have protein every time I eat something I need to make sure it’s quick and easy. And also since I need to eat about 6 times a day and no more than 1500 calories.

      Who knows... maybe after this I will no longer feel the need for meat at all!

        • Thats right Melissa one step (or meal) at a time.....

          Tonight will be a gourmet meal of leftovers.... sweet potatoes, green bean casserol and some stuffing (vegetarian) all served with a side of almonds.

          You can do this!

        • I’m eating my oatmeal right now - I’m 5 hours behind you on the east coast. Lunch is a fruit and soy milk smoothie with fresh Maui Pineapple and dinner is probably going to be our favorite thai restaurant that has great brown rice and a spicy tofu and veggie stir fry that I really like.

        • Vikki...way to go!  I might could do this.  I basically only eat chicken and fish....hardly any red meat.  I love veggies and fruit...so I just might could do this.  But I’m not ready mentally at this point.  I think I might try this after the first of the year.

        • I have to admit that I’m very comfortable with not eating meat so I don’t anticipate any issues with this. I had my oatmeal this morning and a big salad with lots of veggies for lunch. I think we‘re having Thai for dinner so stir fried veggies and tofu with brown rice will be my dinner if that’s where we end up.

        • I will join you ladies. I am vegetarian, but I am stuck in a rut and need to find more inspiring recipes and ideas. I feel like I want to eat extremely clean for the next few weeks, staring with giving up cheese and coffee today! I will post any new ideas that I come up with. Good luck to all!

        • I made a bean dip yesterday that I served on a warm tortilla instead of with chips:

          16oz vegetarian refried beans
          4 oz fat free cream cheese
          3/4 cup chunky salsa

          All mixed together and microwaved for about 5 min.

          I also added guacomoli (store bought), shredded letuce, shredded cheese to the wrap.

          My hubz added diced jalepinos and sour cream.

        • If you want to boost your iron absorption, include something with a lot of vitamin C with your iron rich foods.  

          Bell peppers with your steak
          strawberries sliced into your kale salad
          citrus vinaigrette with your beets

        • I’m meat free 4 days a week, and sometimes I have what’s called soup & salad days with corn chowder (or clam) and a basic green salad.

          I tend to eat more hummus and couscous than refried beans and rice. I like to mix refried black beans with canned peppers or some of them sweet & hot jalapenos. Cubes of Monterey Jack cheese with Peppers is a nice on top melt, by the way.
