      Yesterday I just flew by the seat of my pants in terms of menu choices and made due with ingredients on hand.  Today I will finally get to the grocery store ans have some time to precook some things.  Here is some of the menu I have  in mind for the week:

      Escarole Bean Soup (recipe courtesy of Cynthia http://fabulously40.com/post/id/melissabelles-meatless-adventure-6691)

      Penne with Portobello Mushrooms (cream sauce, a splurge)

      Eggplant Rollatini (lower fat version-no ricotta, baking the eggplant)

      Tortellini with Leeks and cream sauce (ok, another spurge—maybe I will save this one for next week.  I have never cooked with leeks, not sure I will even recognize them when I see them.)

      Oven Poached Salmon

      Plus some general items like eggs, potatoes, hummus and water crackers and a spaghetti squash.  I do not know what I doing with the squash yet, but I will figure that out later!

      We’ll see how far this stuff gets me....if anyone wants one of the recipes just let me know!

        • A quick tip for squash..split it in half, scoop out seeds, lay fleshy sides up in shallow pan, season it with a a couple of pats of butter, 1/2 teaspoon of nutmeg, 1 tablespoon brown sugar...add enough water to cover bottom of squash (it helps to retain moisture), cover with aluminum foil and bake in a 350 degree oven for roughly 1 hour..I usually test it with a fork off and on to see if it is soft..it is really tasty.happy

        • I love spaghetti squash.

          Do you like clams? I have a recipe for Manhattan (red) chowder and another for clam sauce using canned clams.

          We‘re off to a birthday party and the usual sushi guy that travels the parties on the island will no doubt be there. Not worried about the food. There will be a lot of fish and veggies at this house.

        • I must be feeeling better because this is actually sounding good!

          My menu today consists of eggs, toast and fruit for breakfast, cooked veggies thrown over rice for lunch with some slivered almonds tossed in, dinner is toasted cheez raviolis with marinara sauce and spinach salad.

        • toasted rav....dip it in flour, then egg wash,then italian bread crumbs and seasonings deep fried.....really intended as an appetizer but I like it as a dinner with salad on the side.
