      Every day I have started with a plan.  Every day that plan has been turned upside down.  Having the meals lined up  and also the ability to switch them up has helped a lot!

      Today it was a mini bagel for breakfast and asparagus soup.  I am thinking a baked potato for dinner and some frozen yogurt later.  

      This is isn’t so bad as long as I stop and think...

        • We eat baked potatoes for dinner a lot, Melissa. Joe loves to smother them with steamed veggies and low fat cheese. The skin has a lot of fiber and vitamins.

          Love the sound of asparagus soup!  

          I just posted a recipe for the fish I made the other night along with a photo of how it turned out. I’m making Sicilian artichokes for dinner tonight. I’ll share the recipe later.

          If Joe really wants meat I can make him a hamburger steak with some mushroom gravy on it along with his artichoke.

        • You’ve got it! I was about to post the recipe but sounds like you already know it. I use the seasoned bread crumbs mixed with a little Romano cheese, parsley and garlic powder. Wash the artichokes, trim off the pointed leaves with a scissor, spoon the mixture in between the leaves, and steam for 1 hour.
