  • Easy and low calorie potato soup

      I put this together on a whim one night and it was really delicious.

      1 onion, chopped
      4 slices bacon
      1 lb russet potatoes (2 medium to large)
      12 oz. beer
      2C chicken stock
      1/2 tsp white pepper (or black if you prefer)

      Cook the bacon until crisp and the fat has rendered. Remove the bacon and drain on paper towels until later.

      Add the chopped onion to the bacon fat and cook until soft and translucent.

      Deglaze the pan with the beer. Add the potatoes, stock and white pepper and simmer until the potatoes can be blended with an immersion blender. You can also blend the soup in batches in a blender or food processor.

      Cut up the bacon and stir it into the soup. Serve.

      It’s great with chopped scallions sprinkled on top.

      And since the only fat in the soup is 4 slices of bacon and it makes 4 servings - the calories and fat are surprisingly low.
