  • Easy BBQ Chicken

    • I have always had a challenge BBQing chicken with the bone in - breasts or wings.  I always end up either overcooked on the outside or undercooked on the inside.  YUCK!

      So this year, I started a new system that is making the best chicken ever for me.

      I BOIL the chicken first.  I spice up a pan of water with dried onion, garlic (and whatever else is on hand) and cook the chicken it it first.

      Then I either broil it in the oven or on the grill until the skin is crispy and brown.

      What I really like is that I can do this ahead and then refridgerate until I am ready to grill/broil.  The grilling process not only crisps but reheats the chicken if it is cold.

      The chicken turns out succulent AND crispy without and uncooked pieces in the center.

      Because we all have different spiciness tastes, I put the dips on the side.
