  • Easy chuck roast

      My husband is in Honolulu today and I’ve been accused of not cooking much these days so I’m surprising him with one of his favorite meals.

      I took a few chuck strips from Costco, browned them in a pan and set them in a roasting pan.

      Add 1 onion, 1 small can mushrooms and 2 cloves of garlic back to the saute pan and cook until just a little soft. Spread them on top of the meat.

      Deglaze the saute pan with a little wine, add a small can of tomato paste and either 1/2 cup more wine, water or broth (I had some broth left over in the fridge) and stir it all together. pour it over the meat, cover tight with foil and place in a 300 degree oven for about 2 1/2 hours until the meat is tender.

      Makes a lot of liquid to pour over rice or noodles.

      My house smells so good right now and it’s only 11 in the morning. I’m going to turn it off and re heat it when he comes home.
